This recipe is a favorite of my students during my cooking classes. So easy, simple and beautiful, you can prepare it all the year around.
Ingredients for 8 persons
Time: 10 minutes
Mix all the ingredients together. At the beginning, add only 3 table spoons of olive oil, then add more later if you want the pesto more liquid. If you don’t want to add more olive oil, you can always add a little bit of fresh water instead.
It is perfect with pasta, to spread on focaccia, to dip the grissini. If you are a cheese lover, you can add a sprinkle of Pecorino or Parmigiano Reggiano.
