Red kale, squash and orange salad
Winter salad, sour-sweet and super colourful. You are going to love it!
Ingredients for 2 persons
150 g of red kale
1 small organic orange
150 g of squash
Grana Padano
sesame seeds
balsamico vinegar
salt
extra-virgin olive oil
Time: 50 minutes
Let’s cook!
Wash the kale and cut it in thin slices.
Cut the squash in small cubes.
In a pan, stir fry the squash with a little bit of olive oil, until golden (almost 10 minutes). Set it aside.
In the same pan, sauté the kale with a pinch of salt. Add a little bit of olive oil if necessary. When the kale is cooked but still crunchy, add a spoon of balsamico and cook a few minutes until it evaporates. Set it aside.
Wash the orange and cut it in thin slices, keeping the skin.
Prepare the salad gently setting the vegetables and the orange in a large plate, adding the orange slices. Complete with a splash of olive oil, sesame seeds and flakes of Grana Padano.
